I would really like a 2.0 version for my N810. Let's get some use out of the camera!
But I do not think it will come any time soon. Every portable Linux device I've seen only has a 1.x version of Skype on it.

Well, given that there have been no stable 2.0 releases for x86 till now, that's unsurprising.
Soon is a relative term. I think OS2009 is reasonable; whatever Maemo 4.1/Diablo/WiMAX tablet thing is going on certainly is unreasonable.
