are there any more "desktoppy", window's esque desktops that can be installed on maemo? i want to keep maemo, i just want a 'standard' desktop. anything like that?
PenguinBait released a full KDE desktop. There are lots of threads (http://talk.maemo.org/tags.php?tag=kde) in the Alternatives forum (http://talk.maemo.org/forumdisplay.php?f=36) (where this thread should probably be, too), but here's a good one to start with (http://talk.maemo.org/showthread.php?t=20317).
Easy Debian comes with an LXDE desktop, which is sort of Gnome Lite.
There are also some other very lightweight desktops, like FVWM.

i read through all of those, and they all seem to need "boot from sd". i dont have an sd card, so are there any of these that dont need an sd card?
Probably not. The internal flash of the N8x0 is rather small (256MB), and most of the alternative desktops take up a fair bit of room. You'll want to pick up an SD card at some point, though, anyhow. 8GB cards can be found from dealers such as NCIX (http://ncix.com) for <$30 on sale these days, and a 2-4GB card would probably be enough for some of the options.
EDIT: I stand corrected

Yes, PenguinBait's IceWM is small enough for the internal flash.

SD cards are not all that expensive:
