Why, after flashing devices are still some remains of the programs ..
I did everything according to http://wiki.maemo.org/Updating_the_tablet_firmware
I took flasher and Download the latest firmware ..
Of course, everything had to be set again as soon as you open the box :-)

I installed all the programs that I had before flashing and surprise were configured as before ..

how completely clean the device and write new software? "

That's fixed in PR1.2 so will clear out /opt then. It'll still leave the program configuration though (as that's usually desired). There is a new "reset" option in the settings dialogue - I'm not sure exactly what that's going to do though. Otherwise, if you want to do a complete reset, you need to flash the eMMC as well.
