Try "uname -v" at the command line, if the build date is after 1 Jan 2007 you most likely have an SDHC enabled kernel.
The fool proof way is to insert an SDHC card - if it mounts then you have an SDHC kernel.

I did not flash anything yet... I have no SDHC card yet... but maybe soon ;-)
uname -v tells Tue dec 19 ... 2006
So I likely have a non-sdhc kernel I guess...
I am new to flashing. If I understand right, I got my stock n800 from amazon with OS v.2.2006.51-7 .
If I want to flash a sdhc kernel I do following :
1) get http://intr.overt.org/n800-sdhc-kernel/sdhc-kernel.bin
2) get http://maemo.org/downloads/d3.php?f=flasher-3.0
3) Follow the instructions for "Flashing the Nokia N800" on http://maemo.org/maemowiki/HOWTO_FlashLatestNokiaImageWithLinux
4) wait and pray ....
Am i right ? What about the modules ? In general (I am an old linux user but new into internet tablet n800) we have to be care that kernel modules match the kernel image ... so flashing a new kernel may be dangerous if modules are not updated... unless there is a mecanism that allows flashing that ?

I don't think that the sdhc-kernel.bin is the full FIASCO firmware image but just the kernel part. So you might have to add a few parameters to the flasher-3.0 command to just flash the kernel. I have not done this myself but just going on what I have read in the past. There are more specific instructions available somewhere.

There seem to be a few third-party built kernels floating around so YMMV.
