I installed Claws Mail on my N800 and started to download my email from Gmail. It wants to download all 25,000 messages. Is there a way to filter it so I only get the most recent ones?

Login to GMail via the web interface. Hit settings->POP and forwarding. Check the box for enable POP from mail that arrives from now on. Hit save. Enjoy.

I've already done that and that's why it's downloading. I just don't want it to download all of the email in all of Gmail folders. I'd like only the last 2 weeks.
