None of the above.
IMO, the following points play a part of the success of any OS, and having as many of them would be better:
Openess
Number and quality of applications, of which a key element is:
Appeal to developers
Having as less fragmentation as possible
Integration with useful and popular services (like Google services in case of Android)
(if we are talking about products, not just about OSes, then) Hardware quality
Hope I didn't miss anything...
There's also the stab-the-customer-in-the-back factor (eg Maemo's cherry, or WebOS' GPS tracking).

Anyways, what ever catagory you put it in, it appears as though that would be the key to Success. (...But then it is the daddy of the smartphone OS's.)

But remember Symbian rose to dominance on the back of practically no competition (just Palm and MS). And because of that its UI (S60vX) has just stagnated.
