In general, except for a very few exceptions, all phone apps render perfectly in the Galaxy Note. Don't worry about that.

That was for me the #1 Con of any phone against the N900, however, in a couple of weeks, I type faster than the N900 thanks to the predictive XT9.

I've been using DropBox in a SGS2 and it works perfect, the same way it works in the desktop application.
The only difference (which I find very useful) is that it does not download all files...

I do not own a GNote, but maybe it can be something related to save battery that keeps adjusting brightness/colors/etc.
