It shows only what is provisioned by the provider. You can modify the existing one but can't add a new one. Weird though!

Update: There is an app fAPN to add new GPRS access point.

You basically have to force a tracker rescan, though generally the N900 will take care of that itself. There is a thread in the fremantle section regarding this. I will try find it.
