Just go with the 16gb phone. I might have misunderstood, but you sound just like me. I'm not interested to have all my music and movies on the phone. I just copy the videos on the phone that I expect...

My N9 stats are

9.5GB - for User data
4.2Gb - for Installed apps
2.1GB - for Application data
In total there is 15.79GB available

I got 500 photos and over 900 songs on the phone with 4GB...

with both the galaxy nexus and the n8 i've never hit the limit of 16, and thats with movies on em :(

tbh this 64 is overkill, i dont even know what im going to put on it :(

I've got a 64MB N9, and frankly, I never seem to have more than 5-6GB on it, even when I throw some videos and maps on it before travelling. You're probably fine with the 16GB unit.

It all depends on what you will be storing on the phone. 16GB and 64GB will give you 9GB and 57GB storage for user data respectively. Your apps go to another partition so it doesn't use up this...

Well, what are you planning on putting on the phone? Are you going to use it as a camera/music player and everything else like a small tablet?

Personally I have the 64 GB and 35GB is already full...
