Definetly would be good to have that sort of option in MeMailSettings. The choice of 5MB as default seems rather low for most servers.

The FM radio app on the N800 was made by Nokia, the one on N900 is made by community developers who had to start from scratch, so no features were really dropped, it is just a different app.

Most modern European TV models support both PAL and NTSC, but it's probably best to leave it set to PAL in Europe so that you won't have to adjust it if you connect to any TV that doesn't support...

Im not aware of any but I can't think of many OMAP3 devices that have full Flash so far. Once the Flash 10.1 beta starts being released on mobile devices we will be able to see if others support it.
