How can I tweak my defaults in Notes, Email, ...

Dear Experts -- I have the 5.2006.13-7 operating system with xterm installed. When I upgraded, I noticed that some little things were worse than before... notably the font for Notes. I have used notes extensively with a bluetooth keyboard. Now the font has changed to monospace in a large point size. I'd like to go back to the previous version. In fact there are a lot of defaults I'd like to tweak, such as new files being in plain text by default. In email I'd like to send-copy-to-self by default.

I'm thinking there must be some kind of .notesrc file where I could set these defaults. There seems to be such a file in /var/lib/gconf/apps/osso/osso-notes, but it is empty.

it would be nice for many users if we could taylor these defaults that have no GUI for doing it in the operating system. Can anyone help?

You upgraded to 5.2006.13-7? A 770 or what hardware is this about?
