Thanks for the help guys, still not been able to get this working but I ended up unlocking/rooting my Xoom and replacing the supplicant file so now I can see Ad-Hoc networks and use the MobileHotspot...

Here's how I did it Ramjett.

Download and burn the Ubuntu Live CD ISO image from the link on the Wiki, copy the Flasher Deb file and the Global Firmware file onto a USB memory stick.

Reboot...

I found the best was was to use the Ubuntu Live CD process as described in the Wiki... you don't need to install Ubuntu just run it from the CD and you'll be done in 10 minutes.
