In the preferences you can set automatic lock after a period of time, the shortest one being five minutes. So after five minutes of inactivity the device will lock. The other possibilty is manual...

I also had this situation with a pop account for which I downloaded only copies of the mails (leave messages on server). i' quite sure it has to do with this but don't know exactly what.
