For most of 3rd party applications, I suggest you to contact the authors to contribute your traslation files into their products.
I'm trying to make sure there's no copyrights problem with all files...

It's because of the lang_name and country_name fields are not set in locale file. You may raise a bug issue on https://bugs.maemo.org/

Install mscim-googlepinyin from maemo extras-devel repository
Restart your device. Then go into any input field, press "Ctrl+space" to swtich input mode. Now you can input Chinese.
