This looks like a known bug that was supposed to be fixed. Check that you are using the latest version (0.6.17).
Then please remove the file ~/.local/share/okboard/en-user.txt (but keep a backup...

OKBoard only handles languages with Latin alphabet, so Georgian will not work.
This feature is planned but I don't know when I will be able to implement it. At the moment my backlog has been filled...

As discussed with spidernik84, the Italian aspell dictionary contains 34M words (with affix expansion support that was added for Spanish).

My script use aspell as initial dictionary when building language files. It did not deal with affix compression (never heard about this thing before), so it failed with Spanish...

@ferlanero, according to your logs, the 258 first MB of your text corpus only use 1700 unique words (which is roughly the vocabulary of a 2 year old child). The n-gram count is incredibly low also.

Just to be clear: the application shown in a video was a simple POC which failed in many simple real life situations and had a lot of performance...
