Overclocking is just running a system (often just the processor, but other chips can also be overlocked) at a higher frequency (clockspeed) than it is intended to do. This means it can perform a given task in a shorter time. Doing this can cause damage to the chips though (it used to be mainly due to overheating, but nowadays the chips will usually automatically reduce power or shut off before overheating and the main issue nowadays is electro-migration).
