Just thought I would share this as its taken me a while to get it set up.
Using psi (as GTalk is Jabber based) to set everything up you can add MSN, Yahoo, Aim etc etc transports to your Gtalk account. You only need psi for the setup after that its not needed again.
I was using Pidgin but the problem there is it does not integrate with the applications already on the N800, I.E you can't use the desktop "quick contacts" etc.
The cool bit is I'm now using one thing (google Talk) on all my setups:
PC: Gtalk via Google Talk IM
Linux Ubuntu: Gtalk via Gjabber
N800: gtalk via Built in app
