Waooo, that is very weird! In the "Help" menu their is a "Log Viewer". This allow you to get traces of the transcoding process. Could you give me a copy of this log when you convert a video that "does not stretch"?

Same results as Karel using Iriverter 0.16 for Windows, with rheve's profile settings. I converted an unprotected 720x480 DVD source to 400x240 for the N800, and Iriverter was pretty speedy about it. But the black bars are disappointing.
FWIW, I see there's a recent ticket on this one:

There's also a more recent Iriverter version out for Java but I couldn't find a way to modify profiles with it. No luck using the forked Iriverter version, KawaiiRiver, either.
