How i can install games like NFS Shift, Asphalt 5 HD and GT Racing HD on Gingerbread?

Gun bros works good. It is playable but it is more suitable for multitouch devices.

guys, now that NITdroid n12 is released, is it okay to install games in it??? is it stable than gingerbread?

even though the n900 runs all palm pre games.

I cant get the xplane games to install they just loop the entire time

Not with maemo no. You may be able to find an open source version of some games that have been ported to Android but as for the rest of them, NITDroid is the way to go.
