Maybe a stupid question, but can I use OTA to update from 2.1.1.26 to the latest or is it only working for future versions?

You have to boot into TWRP. Then go to Advanced->Multirom->List Roms select your SFOS install and use Flash Zip to flash sensorsfix3.zip.
You do the OTA update in SFOS in Terminal or better over SSH. Nothing will be wiped.
