Hm...according to many sites, N900's GPU is the same as the iPhone 3GS' one, namely the PowerVR SGX 530. Rumour has it that the iPhone has PowerVR 535 GPU, but even so, how come iPhone's GPU can pump two times more polygons than N900?

Except that gaming systems use specialised CPUs and GPUs designed for running games as efficiently as possible. Look up the specs on Wikipedia.

Differences of driver for the GPU. Also you are comparing a multitasking desktop OS with a singletasking (yeah, I know, it *looks* like a multitasking OS, just like MS-DOS with memory-resident codes) mobile OS, some FPS has to go for the benefits of true multitasking. Also the N900 has 2.5 times more pixels to draw (800x480 vs. 320x480).
