Am just wondering, as far as I Lumia 800 doesn't have NFC, now why is Nokia including 360 speaker in the pack? Or can it also play with a cable?

It works well with Bluetooth only. NFC is just a nice gimmick for pairing but not essential.
Oh yes, the speaker can also work with cable, but that's not needed for the Lumia.
