For more info about these apps/games look them up. I may have mistaken some names but I do not remember every one of them. Some description might not be detailed but I do not play every game I install. I install to test mostly. The ones in bold I consider important. You might like other apps/games though.

Apps:
1. X Terminal - Preinstalled but very useful. Look up for commands that you can use in Terminal, even Ubuntu.
2. AbiWord - Word Processing
3. Ansel-A - Image editing application. It has various features not just cut and crop.
4. Banner - Application that displays text in a banner style. Useless but pretty.
5. Battery Graph - Monitors your battery life. You can use it to know what discharges the battery most, like wi-fi, or cpu etc
6. Candle - Light a candle with touch. Useless but pretty.
7. Chromium - Google Chrome ported to the N900. Alternative web browser.
8. Easy Debian - Downloads a 2GB image file and installs various desktop apps like Open Office (Word Processing) and Iceweasel (Desktop Firefox).
9. Conky - Very useful app that gives you various information like apps running, CPU frequency etc.
10. CPUfreqUI - Thread with Care: Overclocking Application.
11. Currency Converter - A currency converter that gets the rates from the internet.
12. CuteExplorer - A GUI explorer capable of navigating beyond MyDocs
13. DosBOX - A Windows DOS X86 emulator.
14. eSpeakCaller - A text-to-speech app that can say the caller's name when someone is calling.
15. Extended Call Log - Shows more information than the phone's log.
16. FBReader - A very good ebook reader
17. Mozilla Firefox - A mobile version from mozilla codenamed Fennec
18. FM Radio - Can tune to FM radio stations. You need the earphones to be plugged in as an antenna.
20. ForecaWeather - Displays the current weather and predictions.
21. fring - A social media app that lets you add various accounts.
22. Gonvert - A converter of mass, length etc.
23. gTranslate - Translates text using Google Translate
24. Healthcheck - Display information about the phone and has some phone tests.
25. Htop - A task manager that lets you view and kill processes.
26. Irreco / QTirreco - A remote control for TV, Amp etc using the infrared module.
27. KMPlayer - A front end for mplayer. Mplayer can play most formats and is a good alternative to the preinstalled media player.
28. Knots2 - Lets you view streamed media from your PC. Search for its Wiki page to know how to set up the streaming server on your PC.
29. Leafpad - A simple text editor.
30. liqflow - Useless but very pretty.
31. Maep - Displays mapping data.
32. MediaBox - An alternative to the Media Player.
33. Midnight Commander - A file manager that is very useful if you know how to use xterm a bit.
34. Midori a lightweight web browser based on Webkit.
35. Mirror - Lets you use the front camera to see yourself.
36. Sygic Mobile Maps 9 - A GPS navigation app.
37. MussOrgsky - Lets you edit id3 tags of Mp3s so that you can change the artist etc.
38. n900fly - Use with caution - Calculates how high you threw your N900 in the air.
39. Navit - A free GPS navigation app.
40. Petrovich - Lets you transfer files over bluetooth. Will be useless with PR 1.2
41.Pidgin Internet Messenger - Lets you IM contacts and send files.
42. QSportsEvent - Tracks updates (scores games etc) on various sports.
43. QStarDict - A dictionary
44. QTRapids - A bittorrent client
45. Recorder - Lets you record things.
46. Sand - Useless but pretty
47. Search Tool - A useful tool that lets you search for files.
48. Seismeter - Calculates movements using the accelerometer
49. Documents To Go - Preinstalled - A free trial Office viewer. It integrates well with e-mails.
50. KOffice - A free Office viewer.
51. Speedometer - Calculates your speed using GPS
52. Stopish - A stopwatch like app.
53. Theremin - A composer that has various layouts and instruments.
54. Thread Carefully - Tracker CFG - Lets you modify the tracker behaviour like defining where not to look for media to add to the library.
55. WifiInfo - A tool to determine Wi-Fi signal strength and speed.
56. xarchiver - A compressing/decompressing tool supporting various plugins like unzip and unrar.
57. Xournal - A notebook like app that lets you input text using the keyboard and write/draw notes using the stylus in the same page.
58. zoutube - A youtube videos viewer and downloader.
59. Rootsh - Enables root access

Widgets:
1. Media Player Widget - Play songs from the homescreen
2. Tunewiki - Using an active connection it can retrieve the lyrics of the currently playing song.
3. Eyes Widget - Eyes that follow you using the accelerometer
4. Bluezwitch - Enables / Disables Bluetooth
5. Conversation inbox - Displays received messages and is a shotcut to conversations app.
6. Touchsearch - Search using various engines right from the homescreen.
6. Battery Level - Displays the battery level in percentage.
7. Photo Desktop Applet - Displays your photos as a slideshow on your homescreen.
8. Facebook Widget - A useful widget if you use facebook. Shows you status updates amongst other things.
9. Foreca Weather - Displays the current weather and forecasts of where you are.
10. Digg Home Widget - Displays Digg articles
11. ApNews Widget - Displays Top News
12. Comic Widget - Displays Comics

Status Applets:
1. Wifi Switcher - Enables/Disables WiFi
2. Simple Brightness Applet - Change the screen brightness with two clicks.
3. 2G/3G selection - Choose whether to operate on 2G or 3G networks
4. Flashlight - Appears only when the camera cover is open. Uses the LEDs as a flashlight.
5. Quick Launch - Displays 4 shortcuts of your choosing.

Plugins:
1. Extra codecs pack - Enables the media player to play some other media types.
2. Subtitles - Enables subtitles in the media player. Usuallt .srt
3.Shortcutd - Enables you to use buttons and sensors like the camera key as shortcuts.
4. Tweakr - Enables you to tweak various settings.

Emulators:
1.fMSX - An MSX, MSX2 and MSX2+ emulator.
2. iNES - A NES emulator. GUI is very good.
3. Mame - A mame emulator. GUI needs work.
4. PCSX - A PSX emulator. GUI is good but framerate suffers.
5. PSX4All - A good PSX emulator. GUI is good.
6. VGB - A gameboy emulator. Could be more optimized. GUI is good.
7. VGBA - A gameboy advance emulator. Could be more optimized. GUI is good.
8. DrNokSnes - A SNES emulator. GUI is good.

Games:
1. Airport - You have to guide airplanes safely to land. Touchscreen.
2. Alien Blaster - A 2D shooter where you control a ship and shoot aliens. Keyboard.
3. Angry Birds - You shoot birds at pigs. Very fun and great physics. Touchscreen
4. Barrage - You shoot tanks, jeeps and infantry with your cannon. Touchscreen
5. Blobwars - An action game where you are a blob on a mission and you shoot other blobs. Keyboard
6. Bounce - You are a ball and you need to roll around the level. Accelerometer
7. Brain Party - A series of tests to measure your brain weight. Touchscreen
8. Burgerface - You have to dodge knives and catch burger by moving your face. This uses the front camera and face tracking. Camera
9. CorsixTH - A port of Theme Hospital. You need the original files from the CD to play. Keyboard and Touchscreen.
10. Cute Square - A 2 player game where you have to try and make squares more than your opponent. Touchscreen
11. Blubbels - Click on 3 or more blubbels to destory them. Touchscreen
12. Discs - A 2 player connect four game.
13. De-Lite - A puzzle game where you have to switch off all the lights. Touchscreen
14. Eightyone - A sudoku clone. Touchscreen
15. Electric Beams - You have to try and light up all the lamps. Touchscreen
16. Enigma - A game where you control a ball and have to catch targets. Accelerometer
17. Evil Plumber - You must choose the correct pipes so that the liquid can flow. Touchscreen
18. Fifteen - Move the blocks to put them in the right order. Touchscreen
19. FluboPuyo - A funny game where you have to make the correct colours meet. Similar to tetris. Keyboard
20. Freeciv - A civilisation port. You need the original data files to play. Keyboard and Touchscreen.
21. Frozen Bubble 2 - A bubble bobble clone. Keyboard.
22. GLTron - A futuristic motorcycle game. Keyboard
23. Gweled - You have to move gems in order to group three or more. Touchscreen
24. Hangman - Guess the letters quickly or the guy might die. - Touchscreen
25. Hex-a-hop - A puzzle game where you have to hop and destroy all green platforms. Touchscreen
26. I have no tomatoes - A game similar to pacman but with more features. Keyboard
27. Jagged Alliance - A port of Jagged Alliance for Maemo. You need the original data files to play. Keyboard and Touchscreen
28. Kobo Deluxe - You pilot a spaceship and destroy anything you see. Keyboard and Touchscreen
29. Labyrinth Lite - You move a ball through a maze to the end. Accelerometer
30. Liquid War - A single player or multiplayer game where you control and army of liquid. Touchscreen
31. Mad Bomber - A crazy guy is throwing bombs that you have to catch. Keyboard and Accelerometer.
32. Maelstorm - An asteroids clone. Keyboard
33. mSpede - Test your speed by pressing the flashing buttons. Touchscreen
34. N-Speed - A futuristic race game. Keyboard
35. Numpty Physics. You have to make the red object meet the yellow object. Amazing physics. Touchscreen
36. OpenArena - An excellent FPS game. Accelerometer, Kayboard and Touchscreen
37. OpenTTD - A simulator where you take care of trains. Keyboard and Touchscreen
38. Pool for Maemo - A pool (billiards) game. Touchscreen
39. PrBoom - A doom clone - Keyboard
40. Super Mario War - Jump on other Super Marios. Keyboard
41. SuperTux - A super mario clone. Keyboard
42. TechnoballZ - A brick breaker clone. Keyboard
43. Teeworlds - A 2D multiplayer game where you have to shoot other players. Keyboard and Touchscreen

51. WoK - A game where you have to catch and throw stuff into the yellow bar. Touchscreen

Maybe someone will eventually build a Wakoopa clone and we'll see what we REALLY do with our N900s. :-)

Xchat, eCoach, Conky, mBarcode occasionally. I actually have Ruby and RubyGtk on mine for fiddling around.

Less often but still used are SiB and KMPlayer, VNC + SSH, WiFiEye.

I have Vim + Ubuntu configs installed for the above Ruby and miscellaneous system fiddling.
