The ReBirth RB-338 was a great softsynth in its day, and it should run on an N900 easily, I would think. Of course I don't know anything about its portability to a linux platform. But it is freely available nowadays, here

Would it be possible to get this fine piece of software ported to our beloved N900?

(I am aware of the Sunvox softsynth, but I find it extremely complicated, especially with its lack of a standard midi interface. Rebirth is much more direct in comparison. Unless anyone can make a similar suggestion for this type of softsynth for the N900? I'd love to see more variety of softsynths on it in general, to be honest!)

Ed. I failed to mention, it has been ported to the iPhone/iPad already. Please don't tell me to get an iPad though, I'm just making a point that it has been done!

To port an app you need access to the http://en.wikipedia.org/wiki/Source_code for that application.

In addition these probably use x86 assembly language for speed. Contact the rebirth (and rubberduck) authors to encourage them to release maemo versions, or source code to interested porters.
