Bounce Evolution hasn't been pre-installed for some time now. It wasn't on the 300 pre-production devices given out at the Summit for instance, and if I recall correctly, some of the testers who received devices even prior to that said their units hadn't come with it installed.

It seems to be available (freely?) from Maemo Select though.

Yes, Bounce Evolution is a free download. It is a short game with limited replay value and more the feel of a small demo. I've heard some speculation that a full version will be available for purchase through Ovi Store eventually, but I've seen no official confirmation of that.

Incidentally, I installed it today.

What you say wrt. replay value and demo-ness is quite true, but I believe it could prove fun to have a bunch of people together and watch how they twist their arms in a knot to complete the levels
