I was wondering a stupid question, I am a noob. I just successfully set up IMAP email on my N810 and wow I get ALL my Gmail emails in it (all 3062) What happens if I delete the emails on the N810, will it delete my email on Gmail?

It should do.
Go to the web interface for gmail, select all the old emails you've read and press the 'archive' button. That removes all the selected emails from your inbox (but you can still see them under 'all mail'). There's no reason at all to have 3062 emails in your gmail inbox.
