Since today my n9 won't connect to Apple mail (me.com) anymore. Prompting me constantly for the IMAP password. I deleted the account and recreated it but still the same issue. Does deleting the account not remove everything and should I delete more? If so, what?

Maybe they forced ssl connection like some other mail providers. Check if that's the case and change the port number accordingly. If that doesn't help, try POP3.

Solved it. Apple introduced 2-step verification which (obviously) doesn't work with Nokia N9 or any other non-iOS device. The way to work around this is to use app-specific passwords. See http://support.apple.com/kb/HT6186
