So we have 4 homescreens and it always defaults to the 3rd one when it loads up. Is it possible to choose a specific one as the default or maybe even shift orders of homescreens?

thanks!

I second this, every time I turn off my phone and turn it on again, it's always the last viewed homescreen that starts "on front" (which is the second in my case)

hi..you can always switch your desktop in one click..here's mine, noticed on the right of the screen, there are 4 dots..that's my first, second, third and fourth desktop..i chose to place it on the right because im right-handed..and it's easier for my thumb to reach the dots on right rather that below, or left.. =)

also notice on the status menu, there's number in the box..that one indicates the active desktop i'm currently on..

Or just set the gconf value to one of the desktops in some rc5 upstart script

Is there a way to always show a particular screen when the phone is unlocked?

Same thing as MohammadAG suggested, but perhaps find a way to have a script run on screen unlock? DBus Scripts might be able to do it?
