I just got my nokia n900 and I noticed the file browser shows what I believe to be my home folder, but I want to be able to go to my root folder, and have it start there.

The default HildonFileManager does not show your /home/user, but some virtual folder like /media.

But there are a couple of alternative file managers, you can install from extras repository. You might look into hamsterfiler, filebox or cutexplorer.
They all are far more usable than the built-in file browser.

Nevertheless you have to set up the temporary repositories according to the notice at the top of this page.

which of the three would you recommend for a power-user? (preferably one that allows me to open files in vim if I want to.)

I would recommend hamsterfiler.
It has the ability to configure the file type handler by the user for this purpose. You have to do this in the Applications menu entry from the status bar menu.
