did nokia n900 have the CFW (custom firmware) like symbian?

No, Maemo is not repacked. Instead, you are supposed to search Maemo.org and its' repos to look for packages and tweaks to install.

Also the cssu is the community's unified effort to create new features and fix bugs in maemo, much like custom firmwares, with the added benefit that software updates happen over the air, and you don't need to reflash each new version.
