I just noticed that when I take a picture with my N900 the time my computer says the picture was taken is off by several hours, is there a fix for this?

Have you checked that the N900 and your computer both have their date/time set correctly, in the same timezones, etc...?

is there any way by which you can automatically have the 'time/date stamp' on all the photos taken ?

I don't think the stock camera app has an option for timestamps, and I don't see a timestamp option in the CSSU camera-ui (2)? (open source replacement for the stock camera app), but you might try submitting a feature request via the CSSU discussion thread or in the camera-ui2 thread...
