I am considering purchasing a Nokia N810 to use as a word processor. Can the GPS, bluetooth and wifi be completely disabled? Does booting up the tablet and shutting down the tablet enable the GPS, bluetooth and wifi before the OS can disable them?

None of that hardware is turned on during boot. You can also disable the services that control the hardware so the tablet boots faster and uses less memory. ASUI makes it easy to do that and to start/stop those services anytime you need the hardware.
