I'm looking at this one. It looks nice and i like that style of headphones. But now i'm curious. I'm going to be paring this with an n800 i have not yet recieved. Would they support stereo sound in 0S2008? Or more importantly, would they even work with the n800? And, any other suggestions for bluetooth headphone headsets?

Generally they only support the handsfree proflie. OS2008 has a set of scripts and install things for the audio stereo profile (A2DP?), but it eats CPU.

But you can get audio BT hifi stereo senders which will plug into the headphone jack.

Take a look at the Jabra a120s. It plugs into the headset jack, and streams the sound, in stereo, to bluetooth headsets. I use one for all sorts of devices - mp3 player, PC, anything that has a standard headset jack. I've also used an adapter to connect it to a 1/4" jack. It works well for me.
