I want to sell my N810 and want to have it restored to when I purchased it, at the moment it has all sorts of things installed, ie emails photos ect

How can I get rid of all this and have it back as new.

Also remove your personal stuff from MyDocs, which the flasher will restore from backups.
But I think you can just say "no" when it asks. Ditto restoring any extra apps and repositories that you may have installed.
