I finished the game and I want to reset all the levels so my son will have to actually win to move to the next level :-). Where are the game files/scores kept?

Highscores and settings are stored in /var/opt/rovio/angrybirds/
If you move/remove both files this works.
Just removing the highscores file seems to leave the levels open.

delete the game and reinstall i guess. I did not backup anything before update and my angry bird restarted XD

Be careful if you delete. Because Nokia removed it from the store temporarily you wont be able to re-download the extra levels

levels are in /opt/rovio/angrybirds/data/levels, be sure you either backup or do not touch that location.

how can i reset the game level and highscires without reinstall the game? in xterminal or on my PC?

I've downloaded the custom levels and now want to remove them - reset the game >>>

This worked for me:

As root:
echo > /var/opt/rovio/angrybirds/highscores.lua
