N900 screen supports 16.7 million colors, however Maemo 5 is limited to 65k, just like Windows mobile 6.5. As for 5800, the TV out ability was never removed, they just didn't ship the phone with the cable and some other accessories in order to get the newly dropped price.

EDIT: The screen is gorgeous to look at even though it only outputs 65k colors.
