I've tried searching here and maemo for these utilities that would be handy, but I can't find them. Do they exist for the N800?

For 'less', it is now in the Maemo depository. See,

http://maemo.org/development/maemo_tools_index.html

on the Application Manager turn on "Red Pill Mode" and you will be able to see and install the utilities.
