according to pics, should it be shift and F for underscore? G is a hypon, and L is an exclamation mark....??
US Qwerty keyboard is Fn-g for underscore, Fn-f for hyphen. Maybe you switched your keyboard locale?

what country are you in/buy the phone from?
Go into Settings-> Text Input
Mine is set to "English, Nederlands" in Hardware Keyboard Layout, bizarrely enough, but it works.

It works, bizarrely like you said but it works. Thanks!
Blue arrow + Ctrl will show an on-screen keyboard with some special chars missing in the physical keyboard, including the underscore.
(This is in an spanish N900 defaulting to spanish/french/portuguese keyboard layout.)
