It's possible, but not without gutting your Nokia software-wise.

There are probably many places where you can find information on how to install a root file system and Linux system on the memory card, but this is probably a good place to start (note that things are different for the N770 and N800!):

I would suggest Part 2 of this
https://maemo.org/maemowiki/HowTo_BootRootFSFromMMC instead and boot from internal card. With N800 there is no big disadvantage since you can still remove card from external slot and it has usb 2.0 so there is not much need to remove the internal one.
