You could use 'pdf password remover 3.0' on your pc (if that's what you have) to remove all security on the pdf, then copy it to the n900 That's what I do ;-)

I think I'll try epdfview. So, how do we install debian stuffs?

evince and epdfview are in the repos. prolly in extras-devel. Both are very stable.
