I think the problem is the iPod firmware: it won't go into disk mode unless it gets power from the USB port.
However, older iPods (2nd gen, I think, maybe 3rd gen, too) that didn't charge over USB...

Have you tried "Hike"? I think it's in the standard repositories. You scan a paper map, calibrate using 3 or 4 points, and it can record tracks as well.
