I believe the three buttons - web/contacts/applications have to stay.

You might be out of luck. I've got an 8700c and same thing happened. It shows up on the Nokia (like it paired) but no way will it "tether" for internet connection.

Update:
So, I went and got a Linksys WRT54G to replace the "better" WRT54GX2 ver. 2 because I couldn't come up with any other ideas.

And of course, everything suddenly works perfectly - streaming...

I think part of my problem is that my N800 doesn't seem to "like" my router. I have a laptop with a built-in 11.b card and another one with a 11.g card. They have no problems streaming audio/video...
