My N900 arrived today and I am used to doing a complete backup (image, if possible, along with tar) when I get a new "computer" (yeah, I know, it doesn't have MMS because it's not a "phone" -- my iPhone friends are going to have a field day).

I see that there are Wiki instructions for updating the firmware as well as links to a Nokia source for N900 images.

Will using that process and the Nokia image "completely" revert the phone to as-shipped configuration?

Yes, flashing both the FIASCO and emmc images will reset it to the shipping state (apart from the lock code).
