When I receive a call, for example, the way the number display's is like this:

5453422343

but it should be like this

510-555-5555

how do I get it to appear like that? Even in the address book there's no dashes. What do now?

being a factory unlocked phone it will not provide you with the dashes.
all other Nokia unlocked phones behave the same. Unless you have a US Carrier branding on it it will not change.
May be some intelligent developer can change the numeric UI in phone other than that there is not option.

This should be presented as an option under Settings --> Language & Region --> Regional Settings

File a ticket in maemo.org Brainstorm? However I can imagine that this is a "US problem" only... :-P

Speaking as a Canadian, good sir, I can assure you it is not!

Brainstorm is a good idea -- soon as I can figure out why it's not accepting my login, I'll try to figure out how to create one

I agree it would be nice to have a more readable display of numbers. It might be tricky to work out a universal solution, though, as different countries have different formats. For example, in the UK we use spaces not dashes.

What's the logic behind the - anyway?

Start from right and go left, add a - after 4 digits, then one every 3 digits?

And how do you transform 5453422343 to 5105555555 in the first place?

as Andre Klapper said, it's a US thing (or US+northern suburbs )

they have a consistent scheme with their phone numbers and are used to writing them down that way.

wouldn't work in europe.

i don't know about other regions.
