Bitlocker is an encryption system for W7 that encodes a whole drive and the key is in the profile, so removing the drive will not make it readable. Good for enterprise secrets, bad for normal people.
For once, W7 is well partitioned. Home is for browsing and games, Pro is for whatever you want, and Ultimate is mainly corporate and outside cases. I, as an IT professional and developer, use Pro since beta and never had one issue.
As for Vista, as an IT pro and developer, strongly recommend you set it on fire while wearing a mask. Vista is a branch of NT, midway between XP and 7. Beacause MS has a 3 year release cycle and it wasn't ready, Longhorn was feature-frozen and polished to release. It's a half-dead retarted child in a beta and deserves its place near ME.

Get 7 Pro, it's well balanced and not lacking. See here what the difference is. Bitlocker, VHD boot, etc. Not a blocker.
