If you kill that daemon, the n900 will reboot.
edit: i mean n810...you could try, im only doing speculations here

I think on n900 with dual booting ubuntu its possible but don't know about n810 though.
Regarding your question, it can be done iirc.
You can easily 'kill hildon-desktop' in xterm but there is a deamon that will bring it up again. Just disable the deamon (I don't know how to do this).
