I have "heard" that the problem could be related with audio-codecs (or N SIP stacks, I never had problems but...) - Generally, SIP-servers do not need to reboot every night (lol, sorry...).

I don’t think that SIP servers require a reboot every day. Please check the same SIP server from your PC as well. I don’t think there should be an issue through PC. As mobile phones tends to be hanged especially smart phones if we stretch a process for long on it.
You can check it on other phones as well before reaching on any conclusion. I am using VOIP services on my mobile and PC and hardly faced these issues yet.
