I just took a look at maemo.org and I see there are 195 apps for OS2007, and 65 or so for OS2008. There are quite a few cool apps for 2007 like rdesktop. Will these work on the N810, or are we limited to just the stuff for OS2008?

Some stuff meant for OS 2007 will run on the 2008, it all depends on....dependencies and the like. In general, you are better off searching/waiting for a OS 2008 specific version. Rdesktop for OS 2008 is available here:
