I gave up on this problem (after it keeps coming up over and over again), and downloaded mp3tag, which is a brilliant piece of software for managing metadata and embedding images into you mp3s.
I'm still going through all my songs, nearly finished, but once it's done I'll never have to worry about album art again.

Nope, it embeds it with the music, so there's no seperate music file. Therefore, nothing comes up in the gallery.
But, I better search for program which can be run from device. I guess, you have to run mp3tag from host to just process all your mp3s..
