I'm trying to hook up my N9 to my Nook Color via an ad-hoc wireless network, so I can VNC into the N9 and use the Nook as a larger GPS display of sorts. The Hotspot app apparently only works for tethering the data network, which I have no need for. Is it possible to do this another way?

I'm not sure how you can even get a Nook to see the N9 hotspot since the stock Nook firmware only supports infrastructure mode and not Ad-Hoc wireless networking.

But you can do what you're thinking of easily with a third device like a pocket hospt that does do Infrastructure mode (available from various carriers).

This device would run the hotspot and with or without network connectivity it would issue private 192.168.x.x addresses to your N9 and Nook. This would allow them to "talk" to each other locally for VNC session and the like.

My Nook runs Cyanogen, so I think it should support it.

Hmmm, I was hoping to avoid the 3rd device if possible, especially since the capabilities already seem cooked into the N9, just with this odd limit of data required.

Would we be able to come up with program of our own that supports infrastructure mode? Unfortunately a lot of these tablets don't do adhoc yet...my touchpad is the same, until they do a public release of the code which will be soon. Would be nice though.
